Albert Tai recipe- Soy sauce Pork

The first Sunday that Jaycee and Terrence went to church, i was at the basement with the youth. So after church service, she asked around for Irene. The church member said to her : Oh ,Albert's wife, Irene.

Since then,she gave me a nickname: Albert Tai (Tai means wife in chinese).

Yesterday i cooked soy sauce pork and it tasted great. Not because i was the one who cooked it, that's besides the point. It was really good. Albert and I finished the whole serving.

So i have decided to jot down my recipe, so i know how i did it.

Ingredients:
Leek
onion
garlic
ginger

Marinate:
2 tablespoon soy sauce
1 tablespoon dark soy sauce
1 tablespoon oyster sauce
1/2 tablespoon sugar
Few drops of thick soy sauce (consistencey is thick, as in, not runny)

Before marinating the pork, slice the pork thinly, and hit the pork with the back of the knife. Scientifically, according to albert and my theory, you break the meat's tendon when you hit it with the back of the knife, hence the meat will be tender and the seasoning will sip through to the meat.

1. Slice leak,onion, ginger and garlic. For extra taste, crush the garlic and ginger with garlic crusher. Add the crushed garlic and ginger into the meat.

2. Stir fry onion and leek, add in the pork, and cook.



Another possible reason for such a delicious meal is i am using a hot plate and a pure steel pot, AMC. My mum bought it for me as part of the dowry. The pot hits really quickly with that hot plate, and i find the tastes much better, compared to the normal gas stove. Well it's money well spent, wouldn't say it's cheap.

We tried to analyse the reason. Albert said it's due to the heat from the hot plate.Another reason is the closed circuit.

Anyway, i am glad that my food tastes good, as usual.
